Oatmeal just might be my favorite food. I've eaten it literally almost every day and it's so versatile. Recently, I discovered the existence of baked oatmeal and I am in love.
This baked oatmeal recipe is SO easy to make and it makes for SUCH a delicious and filling breakfast or snack.

THE RECIPE
Ingredients:
- 2 cups oats
- spoonful of chia seeds
- heavy sprinkle of cinnamon
- 1 tablespoon oil
- 1 egg
- 1 1/2 cup milk
- 1 tablespoon of sweetener (honey, agave, sugar, etc.)
Add-ins:
- Chocolate chunks- for maximum chocolate flavor and added texture
- Heaping handful of frozen fruit- I love frozen berries :)
- Vanilla extract- Adds some extra flavor 😛
- Nuts- I find the nutty flavor complements the oats very well, and it adds a nice crunchy texture
Steps:
1. Mix together oats, chia seeds, and cinnamon
I find it easier to combine all of the dry ingredients first :)
2. Add in wet ingredients (oil, egg, milk, sweetener)
Make sure to mix all ingredients thoroughly!
3. Mix in your add-ins (fruit, chocolate, nuts, etc.)
Don't overmix (I like having fruit/chocolate chunks), but evenly distribute your add-ins
4. Transfer mixture into lined baking tray
I would recommend parchment paper, for easier removal
4. Bake at 350 °F for 45 minutes
The finished texture should be somewhat chewy but a toothpick could be inserted and come out clean!

I LOVE this recipe and it's so customizable! Again, I am a BIG oats lover and baked oatmeal is now one of my go-to favorite oat recipes.
My oats are obtained from Costco, of course.
