EASY BAKED POTATO! šŸ„”šŸ˜

I am a LOVER of potatoes. They are so versatile, so filling, and so delicious. I could quite possibly eat potatoes every day for the rest of my life and I would not complain. One of my āœØFAVORITEāœØ potato meals is the classic baked potato.


There's just something so special about enjoying a flavorful, creamy, and well-seasoned potato. Just LOOK at this potato I enjoyed at the Big E (a New England fair) and how GORGEOUS it is:



Being the baked-potato lover I am, I have very much enjoyed making a baked potato at home for a filling lunch or dinner. Most of the time, I make my baked potatoes right in the microwave! In just a few minutes, your microwave can fully cook a soft, fluffy potato right in your own home. Here's the recipe!

THE RECIPE


Ingredients:

- A Potato: most of the time I use a normal sized Russet Potato; they are normally always lying somewhere around my house.

- Salt

- Vegetable Oil

- Toppings: some classic include butter, sour cream, bacon, cheese, or whatever else you would fancy on your baked potato šŸ’™


Steps:

  1. Wash your potato thoroughly and pat dry

  2. Take a fork and stab the potato around 5 times (so the potato can cook evenly in the microwave)

  3. Rub the potato skin with a thin layer of potato oil and sprinkle on salt (for maximum crispiness and flavor)

  4. Place potato in the microwave- for a medium sized potato (see picture below) I heat my potato for 2 minutes on one side, and then flip for another 2 minutes (at 1200 watts). Side note: timing can depend based on the potato size and/or heat of the microwave. See if you can stick a knife smoothly through the potato to test if it is cooked all the way.

  5. Carefully take potato out, and fill with toppings.

These baked potatoes make a FANTASTIC meal, especially since they're so versatile. Ever since we've been stuck at home, sometimes the ingredients in our house have become limited. The baked potato acts as a base for SO many possibilities.


Throw your leftover vegetables on, or try adding some freshly roasted broccoli or cauliflower.
