Needless to say, I have been trying to utilize chia seeds in any recipes possible, and I thought I would share one of my all-time favorite chia foods: chocolate chia seed pudding 😍😍😍
This is honestly SO easy to prepare and can be eaten for a filling breakfast, quick snack, or yummy dessert.
THE RECIPE
Ingredients (for one serving):
- 1/4 cup chia seeds
- 1 cup milk- any type of milk would work, my personal favorite is almond :)
- 1 tablespoon cocoa powder
- 1 tablespoon sweetener- I recommend honey, maple syrup, or agave
Optional ingredients include:
- Chocolate chunks- for maximum chocolate flavor and added texture
- Fresh fruit- slap on some freshly cut fruit on your pudding to make a delicious food even more delicious (any fruit works- what type of fruit doesn't taste good with chocolate??)
- Vanilla extract- Adds some extra flavor 😛
- Sprinkle of cinnamon- I find the cinnamon flavor complements the chocolate well, but this is totally optional
I would also have a mason jar or sealable container to make and store your pudding in.
Steps:
1. Mix chia seeds and milk
Make sure to separate the seeds so clumps don't form.
2. Mix in cocoa powder and sweetener (and vanilla extract + cinnamon if you are using them)
A film of the cocoa powder normally forms at the top of the mixture- make sure to stir so everything is evenly distributed! There should be no clumps or uneven coloring.
3. Let mixture sit for ~10 minutes
Set the mixture aside so that the chia seeds can start to clump up.
4. Mix again
Mix everything again so that the chia seeds aren't just sitting at the bottom and everything looks evenly distributed.
5. Refrigerate for a couple hours or overnight!
Keep your pudding in the fridge preferably overnight, so that your chia seeds will soak up more moisture and achieve prime pudding texture.
6. Add toppings and enjoy!!
Once your pudding is set, it should be a gel like consistency. I like to add in chocolate chunks and fresh fruit for the best ever chocolate chia seed pudding 💙
This pudding is SO lip-smacking but also SO simple. The ratio of chia seeds to milk can also be used for any other chia seed pudding creations! Be creative and let us know if you use this recipe!!
