EASY PEASY (and yummy) 3 ingredient pancakes

During quarantine, breakfast has become my favorite meal of the day. I literally go to sleep every night for the sole purpose of waking up in the morning and making breakfast. Quarantine has also limited the foods in my supply and these pancakes use only THREE (3) ingredients that almost everyone has in their house.


In addition, these pancakes are healthy and filling so pretty much they're the perfect breakfast option.


 

THE RECIPE


Ingredients:

- One ripe banana

- One egg

- Handful of oats


Optional ingredients include:

- Splash of vanilla extract

- Sprinkle of cinnamon

- Chocolate chips

- Fresh fruit

- Syrup

- Anything else you think would taste lip smacking on a pancake


Steps:

1. Mash banana in a bowl with a fork


2. Mix in egg and oats (and vanilla, cinnamon or choco chips if you have them)

The mixture should be sort of clumpy and have a thick consistency.


3. Heat a skillet on medium heat and lightly grease. Spoon in batter and flip when golden

I like to spoon my batter so that I have mini pancakes rather than regular-sized pancakes. I find that they cook faster and are easier to flip.


4. Top with fresh fruit and/or syrup and enjoy!!


 

They may not look especially appealing but I PROMISE they are so tasty 💙
